    want rich and creamy cupcakes without the guilt? try out half baked co, a vegan-friendly online bakery based out of burbank that makes “deceptively healthy” treats with half the fat, calories and sugar. half baked recently sent me some of their goodies to try, and was completely overwhelmed by how delicious they were. as she was handing me the box of cupcakes, half baked founder carolyn cannon explained to me that she was a very healthy eater and would only bake treats that she would eat herself. i’m happy to report that she has done an amazing job emulating the rich decadent taste of “normal” cupcakes, and none of the the excess fat, sugar, or animal products are missed.

    vegan and gluten-free chocolate covered strawberry marshmallow

    the first thing i tried was the absolutely fantastic vegan chocolate dipped marshmallow. it was so damn adorable, i didn’t want to eat it at first…but i’m so glad i did. we are talking about a perfectly moist and chewy strawberry-flavored marshmallow covered in silky chocolate and topped with sprinkles. i could have eaten ten of these in one sitting. seriously, you gotta try these…and this month half baked co is running a special discount on the vegan marshmallow sticks! check it out.

    next up, the cupcakes…

    salted caramel: chocolate cupcake, caramel buttercream, sprinkled sea salt

    there are tons of flavors to choose from at half baked co, and all of them can be made gluten-free and vegan! i tried four of them, and each one was excellent, starting with the salted caramel. the sea salt and rich caramel frosting went perfectly with the soft chocolatey cake. a+!

    next up was the vegan choco loco coco…

    choco loco coco: chocolate cupcake, pink coconut frosting, shredded coconut on top

    the vegan chocolate chili…

    chocolate chili: chocolate cupcake, chocolate chili buttercream, red pepper on top

    and the vegan root beer float…

    root beer float: chocolate cupcake filled with vanilla froyo, root beer buttercream, chocolate sprinkles and a cherry on top.

    all the cupcakes were insanely good, but the root beer float was my favorite. the frosting was just oozing with that classic soda flavor, and the sprinkles and cherry on top were the perfect touch.

    in los angeles there is no shortage of cupcake bakeries, but i am SO GLAD that half baked co is around, offering healthier options that are also vegan-friendly. plus, their treats are so damn cute and well-presented. i’m a huge fan.

  • They look delicious!! Speaking of becoming more fat thanks to these amazing cupcakes, have any of you guys ever heard of “Thrive Fitness” or “Thrive Vegan Nutrition Guide” by Brendan Brazier?

    Just finished one of the books and it looks like I’ve been eating the wrong types of food if I want to be a “strong vegan”.

    Anyway, just wanted to share this information with everyone else here because all of you vegans rock!!! Especially the Lovely Quarrygirl!!!
