• vegan enchilada burrito at hugo’s: a genius creation

    i am always a huge fan of the monthly specials at hugo’s restaurant, and this month is no different. you must (MUST!) get over there and try out the roasted vegetable enchilada burrito before january ends.

    Roasted Vegetable Enchilada Burrito (vegan): A blend of diced roasted vegetables (butternut squash, carrots, broccoli, potato, onion), chopped spinach, brown rice, a black bean cake and avocado. Rolled in an organic whole wheat tortilla and topped with enchilada sauce, Daiya vegan cheese and cilantro. Served with slow cooked organic black beans in a roasted tomato-chipotle sauce and garnished with a lime cabbage-vegetable slaw. $12.50

    first off, this thing is a beast. it’s huge and stuffed with so much good stuff, you won’t be able to eat it one sitting.

    i think it’s pretty genius: it’s got the tortilla of a burrito, the sauce of an enchilada, and a filling that will blow your mind. we are talking loads of vegetables (squash, carrots, broccoli, cauliflower, potato, spinach and onion), brown rice, avocado, and a BLACK BEAN CAKE. the bean cake is fantastic, and in my opinion what makes it special.

    sadly, burrito innards NEVER photograph well…but i promise this thing was delicious. it also came with a tasty side of black beans in a tangy and spicy tomato-chipotle sauce, and a side of vegetable slaw (i didn’t try that because it contained bell peppers, which i hate).

    this is definitely another winning special at hugo’s, and you have less than 3 weeks to try it. so GO!

    ps- do you know if it’s true that you have to specify you want something vegan even if it says it naturally is vegan on the menu? last time i was there, the waiter said that some things (for me, the tofu scramble) might use butter unless you specifically say “VEGAN”…

  • Wait I thought this was called an enchirito. Have I been living a lie all this time?? Or is it a burrito mojado? Why?

  • Good to see (on Hugo’s menu) that this burrito CAN be made vegan AND gluten-free! Sure wish Hugo’s had delivery service.
