the insane vegan xmas post!
8December 25th, 2010vegan eventsyou may remember the insane vegan thanksgiving post, well now it’s time for the xmas version! we are collecting pictures of vegan xmas dinners, and so far, it seems like you guys are eating quite well.
we really want to make this the biggest collection of vegan xmas photos anywhere. let’s show people all the tasty holiday food that can be eaten without hurting lovely animals! if i am missing your pix, email them to me and i will add them to the post. check out what we’ve got so far…
eric m. went to shojin for the 5 course xmas meal, and sent us pictures and descriptions of the main course and dessert!
pictured above is the main: seitan wellington wrapped in phyllo dough and coated with duxelles and dijon mustard, winter vegetable stew with white sauce, and rice with red quinoa and currants.
shojin dessert: Christmas chocolate cake with banana cream, fruit balls and cranberry ice cream (with a few crunchy cookies!)

I’m loving the Xmas pics. Wish I wasn’t home in Nebraska with what’s left of my family this year because I’d 100% go to Shojin….

Forgot to get pics of everything (there’s still lots left, so I suppose I can recreate the scene and fake it), but highlights included:
Mashed potatoes with chives, sour cream, margarine, and liquid smoke
Rainbow chard sauteed with onions and pomegranate seeds (seriously, pom seeds go great in greens).
Apple chestnut stuffing.
Devil dogs with peanut butter buttercream frosting.
We went with sausage medallions as the main entree.

Wow, all those pictures look so good. I’ve run out of food over the past few days and the grocery stores were closed so I had a bowl of soba noodles (no pictures) for breakfast, lunch, and dinner.

Gorgeous! I was able to get half a wellington from Native foods. SO good. I made a broccoli and rice casserole and potato soup to go with it. For Christmas Eve we had field roast celebration roast (so good) and chipotle mashed sweet potatoes.

Um, this is making me very, very hungry(and I have NO reason to be hungry right now!)
