    these nachos are the ultimate indulgence, and you seriously don’t have to be raw or even vegan to enjoy them.

    we’ve been toying around with raw foods for a few weeks now, and this has to be the richest most extravagant meal we’ve made at home. i suggest you give it at try—it puts most cooked vegan nachos to shame!

    here’s how you make ’em…

    for the base we used 1 package of chips from the raw makery. you can find these things at erewhon if you live in LA. they have a lot of flavor and a pleasing texture, although they fall apart pretty easily.

    for the cheese we blended soaked cashews, sea salt, water, lemon juice, and fresh jalapenos together in the vitamix. BEST NACHO SAUCE EVER.

    as garnish we used homemade guacamole, freshly chopped pico de gallo (onions, tomato, and cilantro), more jalapenos, and a cilantro japapeno mixture also made in the vitamix.

    to assemble, just arrange the chips on a plate and pile the other ingredients on until you can’t go any higher.

    ENJOY!!! the nutty cheese and plentiful vegetables honestly make for the most refreshing nachos i’ve ever eaten—i never thought raw food could be so delicious.
